Since I’ve been working on better meal planning, I thought it would be cool to post my weekly meal plans. I’ll link to recipes I’m using if it’s something I’ve found on one of my favorite cooking blogs, or if there’s something I mention that you’d like to see a recipe post for, let me know!

SUNDAY: I’d planned to make chicken enchiladas on Sunday, but I went out to lunch and had a huge lunch and wasn’t very hungry by the time dinner rolled around, so I ended up whipping up some breakfast sammiches… Fried egg and cheese on an English muffin to be exact. Twas good.

Monday: I cooked the chicken enchiladas I’d planned for Sunday. I read over Pioneer Woman’s White Chicken Enchilada recipe a couple of times to get familiar with it, but just ended up winging it and not actually looking at the recipe as I cooked. They were quite delicious, but not totally perfect.

Tuesday: I planned crispy taco’s for Tuesday, but I ended up making some delicious tostadas instead.  I’ll post a recipe next.  They were yummy.  If you hadn’t figured it out yet, it’s actually Tuesday when I’m writing this.  I’m a day late and a dollar short.

Wednesday: Ranch Turkey Burgers w/ cheddar & avocado with oven fries

Thursday: Beans and Cornbread

Friday:  I don’t usually plan a meal for friday or saturday.  That’s when we tend to do our eating out and about.
