What’s Cookin’?

It’s been awhile since I’ve posted a What’s Cookin’ post, so here’s one for ya! Tonight we had pan seared tilapia that I seasoned with lemon zest and fresh thyme from my garden, black beans and rice, and steamed broccoli with a cheddar cheese sauce.
I’d never made this exact rice before – and it’s a keeper. I sauteed shallots, garlic, a carrot, and some frozen corn and added in some fresh thyme and a dash of worchestershire sauce and a little squirt of tomato paste and added in about a half cup of brown rice and let all of that get toasty together before adding in a cup of chicken stock and let it do it’s thing. About 10 minutes before the rice was done, I popped in a can of rinsed black beans and viola! Delicious rice! Garnish with some fresh parsley and it’s good to go.
I’d also never made this cheese sauce before either. It was OK, but I gotta admit… a little melted Velveeta is better. The foodie inside me just died a little. But it’s the truth, and I’m all about tellin’ the truth to the Internets.
